As you would expect, we feature oysters from around Australia, according to their seasonal availability.
The expansive menu features live seafood, dry-aged steaks and plenty more. And while we often talk about “shuckin oysters
and grillin steaks”, we’re anything but one-trick ponies when it comes to the culinary arts.
Head chef and part-owner Joseph Vargetto has worked with some of the worlds leading chefs including Gaultiero Marchesi in
Italy and represented Australia at the 2001 Bocuse d’Or competition in Lyon. In 2000 he was judged best risotto maker in
Australia by legendary Italian chef and media personality Antonio Carluccio.
At Oyster, we are known to be pretty keen on a good glass of wine. We endeavour to try every wine before
it’s listed, although we do have trouble getting the wine companies to provide samples of Grange and Grand Cru red burgundies.
The list has been structured with something for every budget, and is unabashedly a reflection of the personal tastes of Luke
& Frank.
